For the koeksisters:-1 cup instant mashed potato(made according to packet instructions)-2 cups flour-1 egg-3 tblspns oil-3 tblspns sugar-½ cup warm milk-½ teaspoon salt-1 tablespoon butter-1 10g packet of instant yeast-3 teaspoon mixed spice
For the syrup:-2 cups sugar-1 cup water(Boil on medium heat...Don't over boil,syrup will become too thick)-dessicated coconut for rolling
1.)mix all dry ingredients together.
2.)add the milk and butter to the mash potato,mix.
3.)mix (1) & (2) to form a dough(add more milk if needed) ,leave dough to rise.
4.)once dough has risen to double in size,shape into ovals and leave to rise again.
5.)fry in medium hot oil till golden brown.
6.)leave to cool then soak in syrup and roll in coconut.
INFO & TIPS
the extra fried koeksisters can be frozen.
Defrost, soak in syrup and roll in coconut before serving
