125g butter
1 cup castor sugar
2 eggs
1 teaspoon vanilla essence
2 cups flour
1 teaspoon baking powder
3ml bicarbonate of soda
¼ teaspoon salt
1 big tin nestle cream soured with 2 tablespoon lemon juice
60g chopped pecan nuts
½ cup castor sugar
3 teaspoon cinnamon powder
Cream the butter and sugar till light and creamy
Add in eggs and vanilla essence and beat well.
Sift dry ingredients together and add to the batter with the soured cream
Mix pecan nuts, sugar and cinnamon powder together.
Pour half the batter into a greased pan or cupcake pan. Sprinkle with the cinnamon mixture on top then pour the remaining batter over
Sprinkle balance of the cinnamon mixture over batter
Bake at 180 for 30-40 minutes
