1 kilo chicken (finely cubed)4 tablespoon butter2 teaspoon crushed garlic 4 tablespoon red pepper (cubed)4 tablespoon green pepper (cubed)2 teaspoon red chilli paste2 teaspoon crushed red chilli 2 teaspoon ground cumin2 teaspoon lemon pepper 2 level teaspoon salt 4 large tomatoes (liquidized)2 tablespoon mayo 4 tablespoon lemon juice1 cup grated cheese3 egg whites (beaten)
Heat butter,fry garlic,red & green peppers.Add the chicken,spices tomatoes,mayonnaise,lemon juice & ½ cup water.Mix well and cook on medium heat until chicken is cooked.
Mash8 large potatoes Peel and cut potatoes in half and boil.when potatoes are soft mash and add 3 level teaspoon baking powder2 ½ -3 teaspoon salt (please taste)Little butterLess than ¼ teaspoon nutmeg1 cup hot milk
Place a thin layer of mash at the bottom of your Pyrex/casserole dish.Add the chicken mixture.sprinkle cheese over chicken and then add another layer of mash.Layer egg whites and bake in a pre-heated oven at 180 deg till egg whites brown.Decorate as desired
