INGREDIENTS

250 g Denny mushrooms sliced5 tablespoons butterSalt Pepper 2 tspoons crushed garlic
Place butter in pan add when heated add the garlic and once it is releasing its aroma add the mushrooms and spice wth salt and pepper Let it brown nicely and remove and keep aside Fry ½ onion in the same pan Do not get rid of the butter in the pan as you will make your cream sauce in this same pan
Set your oven temp at 200C
Take the breasts pat it dry wth a clean kitchen towel Cut the breasts in the centre horizontal to make little pocketsSpice the breasts wth following1 teaspoon Chicken spice Robertson’s ½ or more teaspoon Orange pepper masalaLemon pepper 1 teaspoon rustic garlic and herbs spice ( Robertson’s )
8 slices of mozzarella cheese⅓ cup Parmesan cheese grated
Open the pockets and place2 slices mozzarella cheese on the inside of every pocket Take ¼ of the mushrooms or less and place into the pocket ( do not over stuff)Place 1 teaspoon of Parmesan cheese ontop of the mushroomsTake a little of the fried onions and place ontopClose and poke sides wth toothpicks to make sure it is sealed and nothing is going to fall out
Keep filling the other three breastsKeeping the left over mushrooms to make a sauce Sear breasts in same pan you fried the mushrooms until golden brown both sidesPlace into oven for 20 minutes
Whilst waiting for chicken to cook make a sauce in the same pan you used for mushrooms and chicken
Add a little butter if needed Add 1 tspoon crushed garlicLet it brownAdd the mushrooms ( if you hv to little mushrooms fry some more b4 adding the cream
Add 1 cup fresh cream And ½ cup grated Parmesan cheese Let it cook for few SEC until cheese has melted Remove frm stove Put the chicken in the sauce. And serve Or place chicken on your plate and pour sauce over Serve wth veg of your choice Pasta Or rice And a salad Enjoy
