INGREDIENTS
3 large brinjals-thickly sliced
2 large onions-thinly sliced
2 large potatoes-diced
1 large tomato-diced or grated
1-2 teaspoon garlic paste
1-2 teaspoon ginger paste
salt to taste
fresh red chillies to taste
¼ teaspoon turmeric
oil for frying
METHOD
Braise onions in a little oil until soft. Add
brinjals, salt, chilli & turmeric. Cook over low
heat until brinjal is almost soft. Add tomato,
garlic, ginger & potatoes. Add about 250ml water
& cook over low heat until veggies are soft.
