Carrot & Potato Soup

Ingredients:1 onion (sliced)30g butter1 teaspoon ground garlic paste½ teaspoon ground ginger paste½ teaspoon dhana jeeroo powder½ teaspoon chilli powder1 teaspoon salt½ teaspoon white pepper3 large carrots (peeled & chopped)1 liter water2 teaspoon store bought chicken stock powder (optional)1 large baked potato2 cups milk
Method:1. Saute onion in butter till softened.2. Add garlic and ginger, mix in for few seconds.3. Add carrots with spices. Mix in.4. Add water and chicken stock and simmer till carrots have softened.5. Bake potato till tender (I use a microwave).6. Add chopped potato to pot (with peel) and milk and blend together with a stick blender/ blender.7. Check salt & pepper. 8. Simmer until soup thickens to desired consistency.
Note: You may add cooked cubed chicken fillet to soup if you like.May also add some cooked chopped potato/carrot cubes for texture.
