My way spicy style
RECIPE
Cooked in a potjie /cast iron potOn open fire /gas stove/or electric stove
STEP 1MARINATE THE MEATS WITH ALL THE SPICES
1 kg beef blade or leg mutton (can use Chicken pieces)2 tomatoes chopped¼ can tomato puree2 onions chopped big chunky cubes1 tablespoon Mix or Kashmiri or durbs masala 2 teaspoon kashmiri chilli powder ½ teaspoon crushed chilli ,2 teaspoon Dhana jeera 1 teaspoon turmeric,1 Full tablespoon Ginger garlic paste 2 green or red slit chilliAdd 1 tablespoon Paprika for colour 1 teaspoon mixed herbsLittle mint4 tablespoon any soup mixed in water make a paste to add to pot later
STEP2Any amount of Veg mix: steam the hard veges Butternut GemsBaby marrowsSweet potatoes Mushrooms6 carrots cut into chunks 1 red onion chunks (optional)3-4 potatoes cut into halves or if small leave whole with skin on or offSweet mielie on cob cut up
Method:
Heat 1 curry spoon oil and add all the spiced meatsBraise wellAdd water if necessary to soften meatOnce meat is softAdd your veges hard at bottomSoft and quick cooking veges onTopcook till veg are done. Potjie is ready when meat is soft, veggies are fully cooked and a lovely thick gravy forms. EnjoyTips :
Serve potjie with fresh rolls or bread or rice and salads also can have samp with bean or soft pap
