INGREDIENTS
230g cream cheese ( I used Lancewood) 4 tablespoons butter .. softened ½ cup castor sugar 1 large egg 2 tablespoons cake flour 1 teaspoon vanilla essence
Red velvet cake:2 ⅓ cups cake flour 1 ¾ cups castor sugar 3 tablespoons cocoa powder 1 teaspoon baking soda 1 teaspoon salt 1 ¼ cups oil 2 large eggs ½ cup sour cream ½ cup milk 1 tablespoon vanilla essence 1 tablespoon white vinergar Red food coloring ( I used red gel )
Cream cheese icing:2 cups icing sugar ¾ cup fresh cream 115g cream cheese 1 teaspoon vanilla essence .. I USED ROSE ESSENCEYUMEEE
METHOD
Preheat oven 180CPrepare cream cheese filling first Beat cream cheese , butter and sugar until light and fluffy about 2 minutes add egg , flour and vanilla end beat until smooth .. place aside and prepare cakeSift flour , sugar , baking soda ,cocoa powder and salt together . Set aside In another large bowl mix eggs, oil, sour cream, vanilla, milk and vinegar . Add the flour mixture untill well combined and add red coloring until desired colorPour half of the cake batter into prepared pan and top evenly with the cream cheese filling leaving a 1 inch border around edge of pan . Top with remaining cake batter Insert a butter knife into cake batter and lightly swirl the cream cheese filling into batter.. do not swirl to much
Bake 55 to 60 minutes ..
While the cake is cooling prepare the icing Beat icing sugar , cream cheese , fresh cream and essence together leave in fridge for ½ hour and scoop or pipe over cool cake Decorate as wanted ( cake crumbs .. chocolate .. sugar candy etc ) Enjoy 😉
