INGREDIENTS
1 cup oil¾ cup castor sugar¾ cup brown sugar4 extra large eggs1 teaspoon vanilla essence Pinch salt2 cups flour2 teaspoon baking powder1 teaspoon mixed spice 2 teaspoon cinnamon1 cup chopped pecans4 to 5 large carrots finely grated
METHOD
Beat oil and sugars.Add eggs, singly, and vanilla essence. Beat well.Add sifted dry ingredients and mix well. Add pecans and carrots and fold in.Pour into 2 greased loaf pans or a tube pan.Bake at 180°c for +/- 30 minutes or until ready.Decorate with glaze icing.
