1 cup flour ¼ teaspoon salt½ teaspoon baking powder1 teaspoon bicarb⅓ cup cocoa powder1 cup sugar½ cup oil ½ cup hot water + 1 teaspoon coffee diluted½ cup milk2 eggs1 teaspoon vanilla essence
1. In a large bowl sift together flour, sugar.2. Add oil, coffee (mixed into the hot water) and milk. Beat for 2 minutes.3. Add eggs and vanilla essence sence, beat 2 more minutes.4. Pour into 2 round pans (9") or a bundt pan, bake at 180°C for 20-25 minutes till toothpick inserted comes out clean.
Top with melted chocolate mixed with 2 tablespoon fresh cream. Melt chocolate in microwave at 30 sec intervals till it starts to soften and get glossy but still holds it's form. Add cream and microwave again till you can blend easily with a fork (this way the chocolate doesn't cease when cream is added).
