Lemon & Mint Chicken Meatballs Rec cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:1kg fresh chicken fillets1 onion (grated, water squeezed out)½ cup fresh breadcrumbs1 tablespoon ground garlic½ - 1 teaspoon ground green chillies1 teaspoon salt½ teaspoon white pepper1 teaspoon cumin powder½ lemon squeezed½ cup mint (finely chopped)1 teaspoon dried oregano1 egg (beaten) To serve-Lemon Yoghurt SauceCrumbled Feta CheeseFlat bread/ Rocket Salad Method:1. Magimix the chicken fillets and leave in colander to drain whatever liquid may come out.2. Bind all ingredients and with greased hands form golf size meatballs.3. Leave in the fridge to firm whilst preheating oven to 180degC.4. Bake for 15min until lighty golden.5. Mix yoghurt with lemon juice, salt, pepper & chopped mint to taste.Serve with flatbread or salad.
