Shortbread Rec cred: Hajera Ebrahim (mum)Pic cred: Ruhana Ebrahim@mama_taught_me_well Ingredients:250g butter (room temp.)½ cup icing sugar1 cup maizena (corn flour)+/- 1 ½ cups cake flour (as needed) Method:1. Beat butter and sugar till light and fluffy.2. Beat in maizena (corn flour).3. Add in flour and bind by hand, must form a very soft dough.4. Lightly press in a greased cookie sheet pan.5. Make lines with a fork and then poke all over with the fork.6. Bake in preheated oven at 160degC until lightly golden.7. Remove from oven and sprinkle castor sugar over whilst warm.8. Cut into rectangles when cooled a little.
