Basic Butter Dough :Ingredients250g butter butter softened1 cup icing sugar½ cup oil¾ cup maziena2 teaspoon vanilla essence2-3 cups flour Strawberry cream :100g butter / margarine1 cup icing sugar1 teaspoon strawberry essence ½ cup strawberry jamCastor sugar to sprinkle Icing sugar to dust
Cream butter and sugar and vanilla until white and creamy.Add oil and beat for 5 minutes on medium speed.Add maziena beat for 2 minutes.Lastly add in the flour 1 cup at a time to form a soft but firm dough.Divide dough into 2.Roll one half between wax paper, cut into rounds using a small round cutter.Roll second half between wax paper. Cut dough using a mini donut cutter alternatively With the same cutter as the first half of dough cut rounds take a small nozzle and cut into the center of each to make a ring.Place on a baking tray and bake on 170 deg for 10 minutes. Remove from oven and cool on a cooling rack. Strawberry cream :Beat butter, sugar and essence smooth and creamy. When biscuits are cooled, join with the strawberry filling. Warm the jam in the microwave for 20 seconds. Add spoonful in the centre of each biscuit sprinkle castor sugar over jam and dust with icing sugar.
