1 chicken cut into pieces (I took 1 chicken ½ kilo drumsticks)1 tablespoons garlic 1 heaped teaspoon salt2 teaspoon peri peri spice1 teaspoon lemon pepper1 teaspoon crushed red chillies 1 teaspoon chicken spice1 teasp barbecue spice 1 teaspoon garlic salt 1 teaspoon celery salt½ cup buttermilk½ cup yogurt
Coating :½ cup self raising flour ½ cup cake flour Dash of Aromat (a South African Spice)Dash of chicken spice Dash of barbecue spice
Prick chicken pieces with a fork and drain in a clean tea towel. Marinate the chicken in the above spice for an hour. Then add in yogurt and buttermilk now marinate for 2 - 3 hours. Just before frying mix together ingredients for coating and coat chicken pieces in flour mixture and deep fry till golden brown. Put chicken into a pre heated oven and bake on 140 degrees for 8 - 10 minutes till cooked through.
