1kg mutton 1 teaspoon Ginger garlic paste1 teaspoon Red chilli paste3 teaspoon Chilli powder2 teaspoon Salt2 teaspoon Dhana Jeeru (Cumin)½ teaspoon Tumeric p.1/2 teaspoon Black pepperFew strands SaffronFew Elachie pods,cinnamon sticks & whole peppercorns.1/2cup yoghurt1/2cup Tomato puree
*Marinate meat in all above ingr.for an hour or more.
Braise 2 chopped onions in ghee (Clarified butter) & add meat. Cook till almost fully done. Then add the following veggies-*½ butternut,chopped*2 carrots,sliced thickly*1cup green beans*1/2cup frozen peas*2 / 3 potatoes (quartered & prefried)*2 beetroot, boiled seperately..(these are added last..not with other veggies.)
(You could add any veggies of choice.eg.sweet potatoes, cabbage,double beans instead of green beans etc..)
Cook on med.heat,adding water as needed, till veggies are cooked and ghee (Clarified butter) simmers to the top. Cut beetroot into wedges & place over stew. Garnish with chopped dhania (coriander). Serve with hot rotis!
