INGREDIENTS
½ butternut ( peel on ) 2 big sweet potato1 to 2 carrotscut in chunks
1 onion chopped 3 to 4 tomatoes ½ packet tomato paste lemon juice cinnamon stick 1 teaspoon jeera powder 1 teaspoon dhana powder ¼ teaspoon haldi 1 tablespoon morroccan spice handful chopped dhania (coriander)
1 can chickpeas washed and drained
2 cups couscous water salt
METHOD
Add water to a pot and steam veggies until almost soft .
Add grape seed oil , cinnamon sticks and onion and saute until the onions are soft.add the pureed tomatoes and spices and allow this to cook on medium heat , squeeze some fresh lemon . add water approx. 1 to 2 cups water and also add the steamed veggies and chickpea along with chopped dhania (coriander) and cook on low so that flavours can infuse.
steam couscous with water as per box instruction .
Assemble:before serving place the couscous at the bottom the curried veggies sprinkle seeds or pine nuts or any nut u have .u can garnish with mint .if u like the mint taste you can add chopped to the curry.
