Use 2 cups of mixed Chana Dhal and pea Dhal boiled in turmeric water with a pinch of hing (asoefita) or bicarb till soft and well pureed or 2 cups sugar beans till soft keep aside INGREDIENTSUse 6 mutton trotters cleaned cut in 3'sRub with salt and bicarbLeave little while then Soak in vinegar water For 10 minutes or moreDrain wash againNow Place in a pressure potBoil it with cinnamon sticks Elachi (cardomom) aniseed ginger garlic little tumeric cloves bayleaf aniseedBoil for ½ hour Throw that water (my Style) RinceAdd again the same spices as aboveAnd boil till done another +-1 hour till the meaty portions are soft and practically falling off the bonesDrain and remove all the whole spices (I throw away) I drain off excess stork /broth keep very little like ¼ cupKeep asideIn a separate pot Add little oil and little ghee (Clarified butter)Add 1 finely sliced onionTorn up red chilliLittle jeera seeds and mustard seeds1 teaspoon ginger garlic paste and 1 teaspoon garlic curry leaves cinnamon sticks crushed Elachi (cardomom) powder or whole Elachi (cardomom) few cloves whole black peppers BraiseAdd 2 grated tomatoes(optional) Add 1-2 teaspoon kashmiri masala1 teaspoon turmeric or lessSomph powder (optional) 2 level teaspoon dhana jeera spice any brand Nihari Spice (optional) Or use a teaspoon if each that is dhana jeera and nihari spice if you preferAdd ½ teaspoon chilli powder to your taste Now add the boiled soft Trotters /paya (trotters) Cook till dhal are well blended and paya (trotters) is well done Add 1 full teaspoon Garam masalaLet it boil few more minutes Add water if necessary for the dhal gravy if too thickAdjust chilli salt and add Lemon Juice (optional) Make a wagaar with just little ghee (Clarified butter) and jeeraPour over cooked paya (trotters) brothGarnish with shallot mint chopped green dhania (coriander)Enjoy with roti or soft mielie Pap
