INGREDIENTS
2 cups basmati rice
oil
half onion chopped
half red pepper cubed
half green pepper cubed
half bunch cut spinach
1 punnet of mushrooms sliced
half teaspoon crushed garlic
salt to taste
quarter teaspoon crushed black pepper
2 teaspoon Louisiana cajun spice
METHOD
Boil rice until almost cooked
Fry onions in oil
Add spinach and mushrooms with all spices and
cook until most water has dissolved
Add peppers
Fold rice into mixture and steam
