RECIPE
Plain Dhal & Rice with Masala Fried Fish & Aloo Fry

Ingredients for dhal mix:
1 large onion (sliced),
3 tablespoon oil,
1 stem curry leaves,
2 pieces taj (cinnamon sticks),
3 Elachi (cardomom) (cardomom) pods,
3 lavang (cloves),
1 teaspoon Jeeru (Cumin) (Cumin) seeds,
1 cup oil dhal (soaked & boiled),
1⁄2 cup pea dhal (soaked and boiled)
1 teaspoon salt,
2 teaspoon chilli powder,
2 teaspoon dhana Jeeru (Cumin) powder,
½ teaspoon turmeric powder,
½ tablespoon red ginger garlic masala,
2 large tomatoes (liquidized),
Handful mint (chopped),
Handful spring onions (chopped),
2 whole green chillies (slit),
juice of 1 lemon.
Garnish-
Handful fresh dhania (coriander) (coriander- chopped)
Rice:
1 onion (sliced),
2 tablespoon oil,
1 teaspoon Jeeru (Cumin) (Cumin) seeds,
2 pieces taj (cinnamon sticks),
1 teaspoon rough salt,
2 cups basmati rice,
4 cups water.
Aloo fry-
4-5 large potatoes (cut into even flat discs)
1 stem curry leaves
¼ teaspoon mustard seeds
¼ teaspoon Jeeru (Cumin) seeds
4 tablespoon oil
1 teaspoon salt (to taste)
1 ½ teaspoon chilli powder
1 ½ teaspoon dhana Jeeru (Cumin) powder
¼ teaspoon turmeric powder
Water as needed
Fish-
1kg red fish (sliced)
3 tablespoon crushed garlic
2 chilli powder
2 teaspoon salt
2 teaspoon dhana Jeeru (Cumin) powder
¼ teaspoon turmeric powder
1 teaspoon white pepper
2 tablespoon lemon juice
1 tablespoon oil
2 tablespoon red ginger garlic masala
Spring onions (chopped)
dhania (coriander) (chopped)
Katchumar:
1 onion (chopped),
2 tomatoes (chopped),
½ cucumber (chopped),
2 whole green chillies (chopped)
White vinegar,
Pinch salt.
METHOD
Rice-
1. Braise onion in oil with Jeeru (Cumin) and taj till golden.
2. Add water to pot and salt and bring to boil with lid on.
3. Rinse rice, and add to boiling water.
4. Allow to cook on medium heat, stirring pot twice inbetween.
5. Once water is almost burnt out, drop heat to low and allow to steam and fluff up.
Fried Fish-
1. Mix all ingredients together and marinate fish.
2. Allow to marinate for atleast 3hrs. Best overnight.
3. Remove excess marinade of fish and store away in freezer.
4. Fry in shallow-medium oil on medium heat until cooked on either side.
5. Drain excess oil on kitchen paper.
Aloo Fry-
1. Heat oil in pan with seeds and curry leaves.
2. Add spices to potatoes and toss.
3. Add to oil and mix well.
4. Add a little water at a time, cover pan with lid and cook until tender.
5. When water has evaporated and potatoes are cooked, allow to crisp up a little.
Katchumar-
Mix all ingredients together.
Dhal-
1. Boil dhals separately with ¼ teaspoon turmeric and ¼ teaspoon rough salt.
2. Boil till it forms a "mush" texture, then mix altogether.
3. Braise onion in oil with taj, Elachi (cardomom), cloves, curry leaves and Jeeru (Cumin) seeds.
4. Add in spring onions, mint and tomatoes.
5. Allow tomato water to burn out.
6. Then add in dhal mixture with slit chillies and bring to boil.
7. Add lemon juice and cut in fist of fresh dhaina when done. Mix in.
8. Serve dhal on hot rice, with sides of fried fish, aloo fry, katchumar, and papar.
