RECIPE
Wet ingredients: 1 Cup milk + 2 tablespoon vinegar (set aside for 10mins)2 eggs3 tablespoon sour cream2 tablespoon oil75g butter - melted1 teaspoon vanilla extract1 shot espresso*mix together
Dry ingredients:1 Cup sugar2&½ cups flour2&½ teaspoon baking powder1/2 teaspoon bicarbonate of sodaPinch of salt1/2 Cup chocolate chips1 teaspoon cocoa powder2 teaspoon instant coffee granules*whisk to combine
In a stand mixer add in fry ingredients and whiskAdd in wet ingredients with a mixer on low and mix wellAdd batter to muffin cupsSprinkle muscavado sugar and more chocolate chips Bake at 180 for 15-17 minutes or until doneCool and dust with icing sugar
