Orange Loaf Cake

Ingredients:3 extra large eggs1 cup ordinary sugar1 teaspoon vanilla essence⅓ cup orange juiceZest of 2 oranges1 ½ cups cake flourPinch salt½ teaspoon baking powder½ teaspoon bicarbonate of soda½ cup oil
Method:1. Preheat oven to 180degC.2. Grease and line a large long loaf pan. 3. Beat eggs and sugar till fluffy.2. Add vanilla and beat it.3. Add orange juice and rind and mix in.4. Combine sifted flour, salt, baking powder & bicarb and add to mixture.5. Add in oil and beat in.6. Pour into pan and bake for +/- 40min or when toothpick inserted, removes clean.7. Allow to cool for few minutes.8. Remove from pan. 9. Once cake is cooled, decorate with drizzled glaze or dust of icing sugar or even a mascarpone frosting.10. Store in an airtight container.
