250g butter¾ cup icing sugar1 teaspoon vanilla essence¼ cup mixed green and red glazed cherries chopped ½ cup cranberries1 cup chopped Pecan nuts1 teaspoon baking powderApprox 2 cups flour
Pre heat oven to 180 degreesSift flour and Baking powder.In a mixing bowl cream butter, sugar and vanilla until white and fluffy.Add, cherries, cranberry and nuts mix well.Then add the sifted flour 1 cup at a time to form a soft dough. Add ½ cup more if needed.Roll up into logs. Set in the fridge for 30 minutes.Remove from fridge and slice.Place on baking sheet and bake for 10 minutes.Remove from heat and cool completly on a cooling rack.
