Ingredients: 6 eggs separated 1 cup oil 1 cup hot water 6 teaspoon coffee powder 1 teaspoon vanilla essence 2 ½ teaspoon baking powder 2 cups flour1 ½ cups sugar
Coffee sauce: ¾ can condensed milk 3 teaspoon coffee powder Less than ¼ cup boiling water 2 teaspoon butter
Method: 1.) dissolve coffee powder in warm water and set aside.2.) beat the egg yolks, vanilla essence and sugar until pale in colour and creamy. 3.) add in the oil and beat until thick. 4.) add in the coffee and mix again until the mixture is thickened and silky.5.) mix in the flour until combined. 6.) beat the egg whites until stiff and fold into mixture with the baking powder. 7.) pour into two 20cm greased cake tins and bake in a preheated oven of 180 degrees for 25-30 minutues or until cooked through.
Method for coffee sauce:1.) dissolve coffee powder in the hot water and place in a pot with the remaining ingredients.2.) whisk everything until combined and place on heat . Allow to cook until thickened while whisking continuously. 3.) pour over cooled cakes
