Mexican Big Korn Bites Pasta Salad

Ingredients:500g screw noodles2 tablespoon oil 1 teaspoon rough salt1 cup frozen sweetcorn (cooked in micro)1 red onion (chopped)½ red pepper (chopped)½ yellow pepper (chopped)1 firm avocado (diced)Handful black olives (sliced)2 jalapeno peppers (deseeded & chopped)Spring onions (chopped)1 big packet BBQ Big Korn Bites
Dressing 250ml sour cream 250ml store bought salsa ¼ cup mayonnaise 1 tablespoon ground garlic½ teaspoon freshly cracked black pepper1 teaspoon dhana jeeroo powderSalt (to taste)
1. Boil noodles in water with salt and oil till al-dente. Drain.2. Mix dressing ingredients together. 3. Toss noodles in dressing. 4. Add corn, onion, peppers, jalapeno and spring onions to pasta, gently mix in. 5. Toss avocado in lemon juice.6. Garnish pasta salad with olives & avocado.7. Place Big Korn Bites on just before serving.
Note: I added some salt and pepper chicken cubes on top as well
