250g butter or magarine½ teaspoon baking powder ¾ cup castor sugar 2 tablespoon coco2 tablespoon oil 1 ½ cup coconut 2 cups flour 100g peppermint chocolate grated
Mix butter and sugar in electric mix until smooth, mix the oil, then fold in the baking powder, coco, coconut & enough flour to make a soft dough. Roll out dough 7 mm thick, cut into squares, place 2cm apart. Bake @ 180 deg for 10-12 minutes.When cool coat thinly with baking chocolate or icing then dip in grated peppermint crisp chocolate.
