1 cup flour1 cup milk2 teaspoons baking powder1 tablespoon melted butter¼ teaspoon ground cinnamon powder2 tablespoons sugar2 bananas mashed with 1 teaspoon lemon juice1 teaspoon vanilla essence
1. Combine all of the above ingredients & mix into a thick batter. Rest for 15 minutes. 2. Using a hot pan drizzled with oil, use a tablespoon, drop 3 at a time onto the pan & fry both sides evenly.3. Drizzle a bit of oil onto the pan to coat it each time & to fry another batch.4. Serve with maple syrup & a sprinkle of cinnamon powder.
INFO & TIPS
1. Chop up some pecan or walnuts & add to the batter.
2. Serve crumpets with fresh cream & mixed fresh fruit like banana & strawberries.
