Granadilla Mousse

Gelatine
3 tablespoon water2 teaspoon gelatine
Mousse
1⅓ cups fresh cream, whipped1 tin condensed milk1 cup granadilla pulpPrepared gelatine mixture
Granadilla Sauce
⅓ cup granadilla pulp2 tablespoon water3 tablespoon sugar1 drop yellow food colouring
Method
1. Prepare the gelatineIn a small bowl, mix the water and gelatine.Microwave for 20–30 seconds until fully dissolved.Set aside to cool slightly.
2. Make the mousseWhip the cream until soft peaks form.Add the condensed milk, granadilla pulp and cooled gelatine mixture.Mix gently until well combined and smooth.
3. AssembleTransfer the mousse to a piping bag.Pipe into individual dessert cups or bowls.Refrigerate while preparing the sauce.
4. Granadilla sauceAdd the granadilla pulp, water, sugar and food colouring to a saucepan.Bring to a gentle boil, stirring until the sugar dissolves and the sauce thickens slightly.Remove from heat and allow to cool completely.
5. ServeSpoon the cooled granadilla sauce over the mousse.Refrigerate until ready to serve
