INGREDIENTS
Peppermint mousse

2 ½ cups fresh cream chilled
1 tin Caramel treat peppermint
200g tennis biscuits (mint)
2 - 3 tablespoon icing sugar
1 tablespoon cocoa powder
1 teaspoon coffee granules
½ slab Cadbury mint crisp / peppermint crisp chocolate
METHOD
Beat fresh cream stiff Divide into 3 parts
Place biscuits in a plastic bag and crush with rolling pin
Beat Caramel treat until smooth
Mix 1 part of the cream with Caramel and grated chocolate fold into cream
In another bowl sift cocoa powder, half icing sugar and coffee granules and fold into cream
Sift other half icing sugar with remaining cream fold in
In individual bowls pipe the chocolate mixture followed by the caramel and then the sweetened whipped cream add spoonfuls of crushed biscuits then add Caramel mixture ending with the whipped cream
Decorate with fresh mint leaves and more of the crushed biscuits or as desired. Refrigerate and serve chilled.
