INGREDIENTS
1kg skin on chicken cut into curry pieces 3 large potatoes 1 small packet gadra beans2 tomatoes grated 1 onion finely chopped 2 green chillies slit Jeera2 bay leaves 2 Cinnamon sticks 2 star anise 2 cloves2 tablespoons Durban mixed masalaGinger and garlic dhania (coriander) Salt
METHOD
Boil gadra beans until firm but soft inside. Keep asideFry dry spices in hot pot before adding oil to release flavor , add oil and fry onions till golden, add chicken pieces, salt and ginger garlic, half cup water ..braise till chicken is soft and water reduced, add masala and fry for a few minutes, add grated tomato, potatoes and boiled gadra beans, reduce heat and cook till potatoes and beans are soft, Garnish with dhania (coriander). Serve with roti and carrot,onion and chilli salad.
