1. Cut baked potatoes (with skin on) longwards along the sides. So cutting with some soft potato flesh on the skin. Cut into even slices.2. Reserve centers to make mash or in curry, or reserve for any other use for potatoes.3. Place in an oven proof dish.4. Mix cheese sauce as instructed. 5. Add pepper sauce and some grated cheese to it.6. Pour sauce over potato skins.7. Sprinkle on more grated cheese and diced macon and chives.8. Place in hot oven and melt cheese and crisp up macon. Serve immediately.
