INGREDIENTS
500 g mutton mince Bhinda (wash then chop into discs)1 cinnamon stickCumin seedsGreen masala (pound green chilli,garlic and ginger)Chilli powderdhania (coriander) Jeeru (Cumin) powderTumericSaltGarum masalaBiryani powder
1 medium tomato grated1 potato choppedA handful of peas1 onion finely chopped
METHOD
Heat oil and ghee (Clarified butter) in a pot.
Add in Jeeru (Cumin) seeds,cinnamon stick and green masala. Allow to saute but be careful not to burn. Then add the onions and allow to brown. Adjust heat. Next add the mince and the dry spices and allow the mince to cook well. Add in the potatoes and peas. Add a little water if desired. Add in the grated tomato once most of the water from the mince has evaporated.
In a wok or frying pan,heat oil,add in the bhinda,to which chilli powder,salt,tumeric,garum masala and dhania (coriander) Jeeru (Cumin) powder has been added.Keep stirring to prevent burning. Cook until crispy and soft.
Add the bhinda to the mince and mix well. Serve hot with roti.
INFO & TIPS
Par cook the potatoes and mince if desired.
Wash bhinda first before chopping ans it will be very sticky to use thereafter.
