INGREDIENTS
1 tin peach halves250ml fresh creamIcing sugar to taste1 teaspoon vanilla essence1x dzn vanilla cupcakes/ meusli
Garnish-MeringuesMint
METHOD
1. Whip fresh cream with vanilla and icing sugar till stiff.2. Dice ¾ of peaches.3. Slice remainder into ribbons.4. Cut cupcakes into halves horizontally.5. Place piece cupcake down in a dessert cup or bowl.6. Spoon on diced peaches.7. Cover in whipped cream.8. Repeat layers, ending with cream.9. Garnish with peach ribbons, meringues and mint.10. Store in fridge till ready to serve.
Note: replace Cupcakes with meusli if you prefer.
