INGREDIENTS
2kg stewing beef in cubes1kgQuick cook samp ( I used the ace brand)¼ cup of beans3 heaped tablespoon masala½ teaspoon turmeric powder⅓ teaspoon garam masala1 tablespoon ginger and garlic pasteCinnamon sticksStar aniseedBay leaves 1 onions sliced2 tomatoes chopped2 beef/chicken stock cubesCurry leavesFresh thyme
METHOD
Wash quick cook samp and beansPlease in pot with enough waterAdd turmeric and cinnamon sticks to the water and add 1 stock cubes and some salt
Boil till beans is done and samp is soft, keep stirring every now and then so it doesn't catch under
Add oil to a pot and add in whole spices and onions, curry leaves and fresh thymeOnce onions are brown drop in the cut beef and ginger and garlic paste, let this fry till the oil from the meat comes outAdd in tomatoes and spicesAdd in water and cook meat till tender, should take an hourOnce meat is tender drop in samp and beans and cook for twenty minutes on low heat so flavours infuse
I serve it with tomato chutney on the side
