INGREDIENTS
1 ice berg lettuce or coz lettuce or 2 little gems lettuce
3 large tomatoes
½ a cucumber
1 medium onion
½ cup of olives (black, green, chilli what ever you fancy)
½ cup of fresh coriander and parsley finely chopped
1 lemon
¼ cup of virgin olive oil
½ tea spoon black pepper
½ tea spoon sea salt
METHOD
Wash lettuce, cucumber and tomatoes, wash and peel onion. •
Finely chop onion into slices or pieces • Finely chop lettuce
strip about 1 cm wide and cut them into 5 cm length, you can do
this in chunks not each leaf separately, just to give you idea of
size • Cut tomatoes into similar sizes • Cut cucumber in half
length ways, then lay the flat side of each half on the cutting
board and make more slices down the length of the cucumber , hold
them together with your finger and cur across ½ - 1 cm slices •
Wash and dry herbs coriander and parsley and chop finely • Place
salt and pepper in cup or glass and add juice of one lemon and
olive oil • Mix all vegetables and herbs together in bowl and mix
together with clean hands or wooden spoons, pour over lemon oil
dressing and add olives • Voila! Here it is Mediterranean salad
