INGREDIENTS
125g baking margarine (room temp.)1 cup castor sugar4 medium bananas (over-ripe)2 extra large eggs2 teaspoon vanilla essence2 cups cake flour1 teaspoon baking powder½ cup boiling water1 teaspoon bicarbonate of soda¼ cup chopped pecan nuts¼ cup chopped walnuts½ cup choc-chips
METHOD
1. Beat butter and sugar until light and fluffy.2. Add eggs and vanilla and beat in.3. Mash bananas and beat in.4. Sift in flour and baking powder. Beat in.5. Add in water and bicarbonate of soda and beat in.6. Beat in nuts and choc-chips.7. Pour into 2 medium greased non-stick loaf pans.8. Bake on middle rack in preheated oven at 180degC for for 50min or until skewered and removes clean.
