Portuguese Orange Cake

INGREDIENTS

1 ½ cups flour2 teaspoon baking powder¼ teaspoon saltGrated zest of 2 oranges4 eggs1 ¼ cups sugar1 cup fresh orange juice1 cup butter, melted1 teaspoon vanilla essence

METHOD

Preheat oven to 180degC.In a bowl combine flour, baking powder, salt & zest. In a separate bowl combine eggs & sugar. Beat for 3 minutues with electric beater, till pale & fluffy & falls in ribbons.Add in orange juice, vanilla & melted butter, stir in till well combined.Add in dry ingredients and stir till just combined.The mixture will froth a little.Pour into greased cake tin Bake until edges brown Allow to cool, dust with icing sugar
