INGREDIENTS
2 x 200g Porterhouse steaks
Sauce
15 ml (1 tablespoon) cooking or olive oil
1 medium onion, coarsely chopped
3 cloves garlic, coarsely chopped
10 ml (2 teaspoon) finely chopped chilli
60 ml (4 tablespoon) tomato puree
125 ml (½ cup) beef stock
45 ml (3 tablespoon) red vinegar
30 g dark chocolate
METHOD
1. Sauce: Heat oil in a heavy-based
saucepan and
sauté onion, garlic and chilli for about
2
minutes.
2. Add all other ingredients and stir
well. Cook
over low heat for about 5 minutes and
set aside.
3. Heat a griddle pan until very hot
and grill
the steaks for 4 – 5 minutes per side
for medium-
done. Serve hot sauce over steak.
