2 & ½ cups cake flour2 tablespoons cocoa powder1 teaspoon salt1 & ½ cups Sugar1 & ½ cups veg oil2 large EggsPink gel colouring as needed about ½ bottle1 teaspoon vanilla essence1 cup buttermilk1 & ½ teaspoons baking soda2 teaspoons vinegar
METHOD1. Pre – heat Oven 180°2. Mix all ingredients together in mixer. 3. Fill batter into cupcake cases ¾ full4. Bake for about 20minCool.
Cream cheese icing
125g butter 1 tub cream cheese 1 teaspoon vanilla essence 2 tablespoons milk1kg icing sugarBeat butter till white
Add in cream cheese, milk and vanilla essence and beat till well mixed.Gradually add in icing sugar.I used the full 1kg icing sugar.Pipe onto cupcakes.
