Cupcakes:Preheat oven 180°
150g butter150g caster Sugar150 Self Raising Flour3 eggs (beaten)½ teaspoon vanilla essence 2 tablespoon liquid milk
Butter icing: 140g Butter 280g icing sugar ½ vanilla 1tablespoon thick cream (optional)
Cupcakes:Cream together butter and castor sugar until light and fluffy.Add in beaten eggs, flour and vanilla essence and beat.Once combine add the milk.Spoon in cases and bake for 18 minutes or until cooked. Cool.
Icing:Beat and softened butter add the sugar, vanilla essence and cream beat until light and fluffy.Decorate cupcakes as desired.
