INGREDIENTS
¼ cup olive oil2 cups sliced almonds 2 tablespoon sesame seeds1 teaspoon salt2 teaspoon crushed red chillies 2 cups cucumber - sliced 2 cups pineapple - chopped ¼ cup red peppers - julienne ¼ cup green peppers - julienne ½ cup dates - chopped ¼ cup feta cheese - cubed 1 packet washed mixed lettuce
Dressing : ½ cup mayo ¼ cup mustard 1 tablespoon brown sugar 2 tablespoon lemon juice 1 tablespoon soya sauce (optional)½ teaspoon saltfreshly ground pepper
METHOD
Heat olive oil, fry almonds and sesame seeds until light pink/brown.Strain almonds and sesame seeds & leave oil to cool.Sprinkle salt & crushed red chillies on almonds & sesame seed mix.In a platter/bowl , layer lettuce, cucumber, pineapple, peppers, dates & feta.For the dressing, combine all ingredients & add in the oil that was used to fry almonds and sesame seeds. Pour over salad & enjoy!
