RECIPE
I used baby potatoes, boiled for 15 minutes or until a knife inserted goes through the potato easily. Remove from water and drain, arrange potatoes on a baking sheet, then, using the flat base of a drinking glass, gently press down on each potato until it splits. Drizzle over with some olive oil and sprinkle with salt, black pepper and dried parsely.Place in the oven on grill for 15 minutes approximately. As it comes out of the oven, top each potato with a knob of herbed garlic butter.🥔Serve alongside roast chicken, lamb or grilled fish
