INGREDIENTS
2 tablespoon ground garlic1 teaspoon ground ginger1 tablespoon ground red chillies1 teaspoon salt2 teaspoon freshly ground black pepper2 teaspoon mustard powder2 teaspoon kashmiri chilli powder1 teaspoon Bbq spice1 teaspoon Steak & chops spice2 tablespoon brown vinegar2 tablespoon lemon juice¼ cup oil2 sprigs fresh rosemary/thyme (optional, or dried)2kg lamb riblets2 tablespoon Bbq sauce2 tablespoon tomato sauce1 tablespoon mustard sauce
Basting sauce-¼ cup honey¼ cup Steers Bbq Sauce¼ cup Spur Basting Sauce2 tablespoon lemon juice
METHOD
1. Marinate the ribs and leave overnight in fridge.2. Place in oven proof dish and cover with foil.3. Bake on 160degC for 2-3 hrs and render the fat by slow cooking it. 4. Cook till riblets are tender and meat falling off the bone. 5. When cooked through, remove from marinade.6. Strain marinade from oil. Discard the oil. 7. Mix marinade and basting sauce ingredients in a saucepan, bring to heat.8. Brush onto riblets.9. Place back into oven and bake till basting caramelizes.10. Then turn oven on grill and slightly charr riblets.
