RECIPE
• 1 leg of lamb, cleaned & slit through• Put cut garlic cloves/ crushed garlic into slits
Marinade• 2 tablespoon ginger/garlic• 2 big tablespoon fresh red chillies masala• 2 teaspoon red powder chillies• 4 tablespoon tomato paste (or 2 satchets)• 1 teaspoon crushed Jeeru (Cumin)• 1 teaspoon arad (Turmeric)• 1 teaspoon black pepper• 1 teaspoon mustard powder• 1 teaspoon Aromat (a South African Spice)• 4 tablespoon lemon juice/vinegar• 2 tablespoon spillers peri peri oil or olive oil
- Mix all ingredients well & marinate your lamb leg preferably overnight.
- Cook on very low heat adding little water at a time as required on stove for approximately 2 hours... (In AMC dome pot if you have otherwise any other big pot will do)
- Once your roast is cooked...carve/slice up thinly using a steak knife & pour your remaining marinade into a saucepan. Add 1 cup fresh cream & bring to boil till it thickens slightly. Drizzle some sauce over your meat before serving on platter & remainder sauce can be served on table (to be added to each persons liking).
☆ Serve with english veggies, baked potatoes or chips...ENJOY!!!
