INGREDIENTS
500g chicken pieces
In a pot add ½ cup oil, 1 onion chopped, 1 green chili cut, 1 teaspoon cumin and fry until light brown
Then add, 1 tablespoon of ginger/garlic paste, salt to taste, chicken pieces, ½ cup yogurt, 1 teaspoon red chilli powder, 1 teaspoon red chilli crushed, 1 teaspoon coriander powder, 1 teaspoon cumin powder and cook it for 2-3 minutes.
Now add, 1tbs of shaan nihari powder , stir add 3 cups hot water cover and cook for 8-10 minutes on low flame.
Mix 2 tablespoon roasted flour with lukewarm water add to the nihari cook until thick, last add 1 teaspoon of fennel powder and juice of half lemon.
Garnish with julienne ginger and chopped coriander.
Ready..
METHOD
*Naan made using Arabic dough. .
10 minute Arabic dough
2 cups warm water4 tablespoon sugar 2 tablespoon yeast2 cups flour1⁄4 teaspoon salt2 tablespoon milk powder- secret ingredient that makes 'em so soft
Mix together and set aside for 10-15 minutes. Then add:1⁄2 cup oil3 cups flour+ 1 teaspoon baking powder (optional)
Mix well and knead until combined then use as desired. I let it sit for another 30 minutes.
Use for subs, pizzas, bagels etc. *You don't have to do it in two stages. You can make it as you normally make a yeast dough & it turns out great. Rises in half hour
