Cooked in tomato gravy(See Note at the Below) I used the lucky star sardines Small rectangular can170 g can sardines remove the center bone and drain a bit of the brine but keep only 1 tablespoon of the brine to use in the chutneyRemove only the center bone In a potAnd keep only 1 tablespoonIn little oil add little sliced onionBraise with little mustard seeds and whole Jeeru (Cumin) seedsAdd few curry leavesFinely chopped 1 green chilliFew sliced garlicBraiseAdd2 grated tomatoesAdd ¼ teaspoon tumeric1 teaspoon kashmiri or durbs masalaCook till tomatoes are almost cookedAdjust the saltPlace the cleaned sardines on top of the tomato gravyAllow to simmer for 5 minutuesGarnish with chopped green dhania (coriander)UNCOOKED SARDINESDiscard the brine and remove the center boneAdd Chopped onion chopped green chilli or crushed black pepperAdd mayonnaiseChopped greensCan be used as on a sandwich or rolls or crackers..
