250g butter2 cups castor sugar4 eggs3 cups flour4 teaspoon baking powder5 tablespoon lemon zest Juice of half lemon1 cup fresh milk¼ cup blue /black poppy seedsSet oven to 180°C. Grease and line two loaf tins and set aside.
Sift dry ingredients and add it to your stand mixer. Add in butter, eggs, milk, lemon juice, lemon zest and poppy seeds. Beat all ingredients until smooth. Spoon batter evenly into baking tins. Bake for 35 - 40 minutes or until skewer inserted comes out clean. Turn out onto cooling rack and drizzle lemon flavored glaze icing over. Layer with lemon slices and sprinkle over fresh thyme. Slice and enjoy

Lemon Glace icing
1½ cups icing sugar
1 ½ - 2 tblsp lemon juice
Mix together until you get a nice consistency not too stiff nor runny.
