2 cups grated (on the fine side) cheddar cheese125g of butter1 cup flour½ teaspoon salt Mix all the ingredients together either in a food processor or by hand - I used my hand. Work the dough well then roll out the dough - about 3mm. Use a small shot glass or a small cutter to cut out the biscuit. I used an old Chip and Dip fork to poke some holes into the dough. You can use a toothpick. Don't be tempted to add water - the moisture from the cheese will bring the dough together. Make a mix with crushed flaked salt + mixed herb. Lightly sprinkle from a height - do not overdo this step. Bake for 15 minutes at 170 degrees celcius. Leave to cool on the tray then remove the biscuits. Store in a dry place.
