INGREDIENTS
250g room temperature butter½ cup castor sugar1 egg1 cup chopped pecan nuts2 cups fine coconut2 tablespoon maziena2 cups cake flour3 tablespoons cocoa powder
METHOD
Cream butter and sugar untill light and fluffy.Add the egg.Sift flour,maziena,cocoa powder together Add the chopped pecan nuts and coconut into the flour mixture and toss well to coat the pecan nuts.Add into the butter,sugar and egg mixture and make a soft dough.Roll the dough into a long log and cut diagonally to make a diamond shape.Bake in preheated oven at 200 degrees.Remove and cool.Spread milk chocolate on top of the biscuit and immediately sprinkle grated peppermint crisp.Leave to set untill the chocolate becomes hard.Enjoy with a nice hot cup of tea
Topping:Grate one peppermints crisp and set aside in the fridge.Melt one bar plain milk chocolate over a double boiler or in the microwave.
