INGREDIENTS
Grated cheddar/mozzarella cheese2 dozen mini tortillas1 avocado (cubed)1 tablespoon lime juiceFilling-500g rump steak (cubed)1 tablespoon oil1 teaspoon red ginger garlic masala1 teaspoon crushed garlic1 teaspoon dhana jeeroo powder1 teaspoon salt1 tablespoon lime juice1 tablespoon mayonnaise2 tablespoon Sriracha sauce1 cup frozen corn1 red pepper (diced)Salsa-2 large tomatoes (cubed)1 small onion (chopped)½ teaspoon salt½ teaspoon pepper½ teaspoon chilli powder½ teaspoon dhana jeeroo powderPinch turmeric powder
METHOD
1. Heat oil for filling, add spices, ginger garlic masala and garlic. Braise for few seconds then add steak and lime juice.2. Cook till half done, then add corn and peppers.3. When almost done add sauces and cook till dry.4. After cubing avo, toss with some lime juice so does not brown.5. Saute onion in oil for salsa. Add tomatoes and remainder ingredients and cook till tomatoes have softened and reduced.6. Spray 'and Cook a cupcake pan.7. Slightly warm tortillas in microwave so that you may easily shape into cupcake pan.8. Spoon in avo, salsa, steak filling.9. Then sprinkle on cheese, dried mixed and pinch paprika on each cup.10. Bake in oven till shell is crispy. Remove, cool for a minute and serve
