Chicken Tortilla Cups Rec Cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:Grated cheddar cheese 2dzn mini tortillasPickled sliced jalapenos (garnish) Filling-500g chicken fillet (cubed)1 tablespoon oil1 teaspoon red ginger garlic masala1 teaspoon crushed garlic1 teaspoon dhana jeeroo powder1 teaspoon salt1 tablespoon lime juice1 tablespoon mayonnaise2 tablespoon Sriracha sauce1 cup frozen corn1 red pepper (diced) Salsa-1 avocado (cubed)1 tablespoon lime juice2 tomatoes (cubed)½ red onion (chopped)Fist fresh coriander (chopped)Pickled sliced jalapenos (amount as desired)Pinch salt & pepper Method:1. Heat oil, and spices, ginger garlic masala and garlic. Braise for few seconds then add chicken and lime juice.2. Cook chicken till half done, then add corn and peppers. 3. When almost done add sauces and cook till dry.4. After cubing avo, toss with some lime juice so does not brown.5. Mix all salsa ingredients with avocado.6. Spray 'and Cook a cupcake pan.7. Slightly warm tortillas in microwave so that you may easily shape into cupcake pan. 8. Spoon in chicken filling and sprinkle on cheese.9. Bake in oven till shell is crispy.10. Serve with salsa. (Top the taco bowl with the salsa and eat.)
